This recipe of the burger will cover everything needed to make delightful veggie burgers from scratch, including the preparation of delicious homemade patties with its special sauce. So here are the instructions on how to make a veggie burger with the perfect tangy, sweet and spicy mayonnaise dressing.

Follow the Steps of How to Make Veggie Burger

1. Preparations

There is a total of eight steps for this classic vegetarian burger recipe.
First, make your breadcrumbs, if you have breadcrumbs then simply skip these steps and move on to the other steps. But for a more crispy texture, I would recommend using panko bread crumbs, these are easily available in any supermarket. For breadcrumbs break 4-5 slices of bread and add in a mixer or dry grinder, few days-old slices of bread would also work. Grind these slices to a semi-fine consistency and place them aside as these breadcrumbs will bind the vegetable patties and will make them crisp.

2. Preparing Veggies

Rinse and steam 4 medium-sized potatoes, 1 medium carrot, 9-10 French beans, and ½ cup green peas until they are softened, and rinse them till no moisture is left. Peel and roughly chop the potatoes and carrots while they’re warm and finely chop the french beans.
The next step is to mash the potatoes and let them cool down completely, after that add the chopped carrots, beans, and steamed peas. Combine well and keep it aside.
Then finely chop 1/2 medium-sized onion and crush 5-6 garlic cloves, ½ inch ginger, and 1 or 2 green chilly paste.

3. Making the Patty Mixture

Heat 2 teaspoon oil in a pan and add the ginger-garlic-green-chili paste to it and sauté for few seconds till the raw aroma of ginger and garlic goes away. Add the chopped onions sauté until transparent. Now add the seasonings like ½ teaspoon garam masala, coriander powder, cumin powder, red chili powder, and ¼ teaspoon turmeric powder and mix the ground spices with the rest of the mixture. Now switch off the flame and add cilantro. Mix all the other ingredients left, i.e. sautéed onion mixture and add salt as per taste and 6-7 tbsp of bread crumbs.
Combine everything and refrigerate the mixture.

4. Preparing the Dressing

Take 4 tbsp Eggless Mayonnaise in a small mixing bowl and add 1 tbsp ketchup, half squeezed lemon, seasonings like oregano, chili flakes, garlic powder, and ¼ to ½ teaspoon sugar as per taste. Whisk the dressing very well and make sure to check the taste and add whatever you wish you as per taste. Slice the veggies like onion, tomato, and cucumber and shred 5-6 small lettuce leaves, and set these veggies aside.

5. Preparing Batter

In a medium-sized mixing bowl take an equal amount of all-purpose flour corn starch.
Add ½ cup water to mix everything into a smooth batter without any lumps.

6. Breading

Make bun-sized patties and 4mm thick dip it in the dry mixture of all-purpose flour and corn starch, then dip into the wet mixture and finally cover it with the breadcrumbs. Now check the temperature of the oil it should be 180 degrees C. Put the prepared patties in the oil and deep fry for 2-3 minutes per side until golden brown. Now drain the veggie patties on paper towels to remove excess oil.

7. Toasting the Buns

Heat a small pan and toast the buns till crispy and golden.

8. Assembling the Burger

Now spread the spiced mayonnaise dressing on the butter-toasted side and place the patty on the bun, top it with the sliced veggies and spread some dressing on the second half of the bun, and end it up with some shredded or chopped lettuce
Your veggie burger is ready. Assemble all veggie burgers this way and serve with some ketchup or mustard sauce. French fries and potato chips make great sides to your burger.
